Hi friends! Here I shared my journey of learning to make corned beef safe for our allergies, which include a mustard allergy. I go through the whole process I went through, from trimming and brining a brisket, to then cooking it in the instant pot. I also show some fun ways to serve your corned beef or use up the leftovers!

Amy and Jacky Instant pot corned beef and cabbage. I cooked mine for just under 2 hours with a 20 minute natural pressure release. Note, I have a 8 Quart instant pot, so if you have a smaller one, you will need to cook less than 8 pounds of corned beef at a time.

Dairy & Egg Free Thousand Island Dressing

Ingredients
- 1 c. Mayo – use your favorite vegan mayo like Hellmann’s Vegan for egg free
- 4 Tablespoons bread and butter pickles chopped up or sweet pickle relish drained. I use homemade mustard free ones
- 3 Tablespoons ketchup
- 2 tsp sugar
- 1 Tablespoons white vinegar
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/8 teaspoon white pepper
Directions
- Mix everything together. I blended mine with an emersion blender for a bit to reduce the chunks of my bread an butter pickles. Feel free to pulse in a food processor or blender instead.

- Vegan Mayo: There are many versions of vegan mayonnaise available in stores near me. If you have a mustard allergy, though, be very careful as many vegan mayos contain mustard, whether labeled or not. Hellmann’s vegan and Duke’s are two companies you can research if you are in the United States.
